# What You Need:

01 - approximately 4 cups ripe guava (pink or white), peeled, deseeded, and chopped
02 - 1/2 cup water

# How-To:
01 - Grease an 8x8-inch square baking pan with butter and line with parchment paper, leaving overhang on sides for easy removal of the set confection.
02 - Combine chopped guava and water in a saucepan. Simmer over medium heat until fruit becomes completely soft, approximately 15 minutes.
03 - Transfer cooked guava to a blender or food processor and puree until completely smooth. Press through a fine mesh sieve to remove any remaining seeds or fibrous bits.
04 - Measure exactly 2 cups of guava puree and return to a heavy-bottomed saucepan.
05 - Add sugar and lime juice to the puree. Cook over medium heat, stirring constantly with a wooden spoon or heatproof spatula to prevent sticking.
06 - Continue cooking for 30 to 40 minutes until mixture noticeably thickens and begins pulling away from the sides of the pan. The mixture should form a cohesive mass and hold its shape.
07 - Stir in butter until fully incorporated and mixture becomes glossy. Remove from heat when very thick.
08 - Immediately pour hot mixture into the buttered parchment-lined pan. Smooth surface evenly with spatula.
09 - Allow to cool completely at room temperature for approximately 1 hour until firm and set.
10 - Lift set confection from pan using parchment overhang. Cut into 1-inch squares or diamonds using a greased knife. Optionally roll pieces in superfine sugar for coating.
