04 - 1 teaspoon vanilla extract

09 - 24 large marshmallows
10 - 1 cup dark or semisweet chocolate chips
11 - 2 tablespoons unsalted butter
12 - 24 thin round chocolate wafer cookies
13 - Green icing, store-bought or homemade
14 - Gold sprinkles or edible glitter, optional

# How-To:

01 - Preheat oven to 350°F. Grease a mini muffin pan or line with mini cupcake liners.
02 - In a mixing bowl, whisk melted butter and sugar until combined. Add eggs and vanilla extract; mix well.
03 - Sift in cocoa powder, flour, salt, and baking powder. Stir until just combined.
04 - Spoon batter evenly into mini muffin cups, filling each about 2/3 full.
05 - Bake for 12 to 15 minutes, or until a toothpick inserted comes out mostly clean. Cool completely in pan.
06 - In a microwave-safe bowl, melt chocolate chips and 2 tablespoons butter in 30-second intervals, stirring until smooth.
07 - Insert a toothpick into each marshmallow. Dip marshmallows into melted chocolate, coating completely. Allow excess chocolate to drip off.
08 - Place each chocolate-dipped marshmallow on top of a chocolate wafer cookie to form a hat. Let set until chocolate is firm.
09 - Remove brownie bites from pan. Pipe a band of green icing around the base of each marshmallow hat, and add gold sprinkle for the buckle.
10 - Place each Leprechaun Hat on top of a brownie bite. Gently press to adhere. Remove toothpicks carefully.

# Expert Hacks:

01 -
  • They're undeniably Instagram-worthy without requiring actual baking skills or fancy equipment.
  • The texture contrast between fudgy brownie, creamy marshmallow, and crispy cookie is absolutely addictive.
  • Kids and adults genuinely get excited about putting these together, turning kitchen time into a real celebration.
02 -
  • Don't remove brownies from the pan while they're warm or they'll fall apart; patience on cooling saves you from a pile of crumbs.
  • If your melted chocolate gets too thick to dip, microwave it for just 15 seconds rather than pouring it back in the bag; temperature matters more than heat.
03 -
  • Chill your brownie pan in the freezer for 15 minutes before unmolding; cold brownies hold their shape far better than room-temperature ones.
  • Keep all your decorating components within arm's reach before you start assembling—fumbling around wastes time and makes the chocolate set before you're ready.
