Fluffy quinoa topped with strawberries, basil, nuts, and a light honey drizzle for a fresh start.

# What You Need:

→ Quinoa Base

01 - 3/4 cup quinoa, rinsed
02 - 1 1/2 cups water
03 - Pinch of sea salt

→ Toppings

04 - 1 cup fresh strawberries, hulled and sliced
05 - 2 tablespoons fresh basil leaves, finely sliced
06 - 1/2 cup unsweetened plant-based yogurt
07 - 2 tablespoons slivered almonds
08 - 2 teaspoons chia seeds
09 - 2 tablespoons vegan honey or agave syrup

→ Garnish

10 - Additional basil leaves
11 - Freshly ground black pepper

# How-To:

01 - Combine rinsed quinoa, water, and sea salt in a medium saucepan. Bring to a boil over medium heat, then reduce heat to low. Cover and simmer for 12 to 15 minutes until quinoa is tender and water is absorbed. Remove from heat, let stand covered for 5 minutes, then fluff with a fork and cool slightly.
02 - Divide cooked quinoa evenly between two serving bowls.
03 - Top each bowl with sliced strawberries, fresh basil, and a dollop of plant-based yogurt.
04 - Sprinkle slivered almonds and chia seeds over each bowl.
05 - Drizzle vegan honey or agave syrup over the top of each bowl.
06 - Finish with additional basil leaves and a touch of freshly ground black pepper if desired.
07 - Serve immediately while quinoa is still slightly warm or at room temperature.

# Expert Hacks:

01 -
  • It comes together in under 30 minutes, which means you can actually make it on a Tuesday morning instead of just dreaming about it.
  • The combination of creamy yogurt, fluffy quinoa, and bright basil feels like eating spring itself, and somehow that makes you feel lighter for the rest of the day.
  • It's forgiving enough to swap ingredients around based on what's in your fridge, so boredom isn't really an option.
02 -
  • Don't skip rinsing the quinoa—I learned this the hard way when I made it once without rinsing and ended up with a bitter, slightly soapy taste that no amount of honey could fix.
  • Fresh basil wilts quickly once it's sliced, so do that step as close to serving as possible, otherwise you'll have dark, bruised leaves instead of bright green ribbons.
03 -
  • Buy strawberries that still have their green tops attached and smell fragrant, which means they were picked recently and will have so much more flavor than pale, smell-less berries.
  • If you can't find vegan honey, agave nectar works beautifully, but you could also drizzle with a date paste or even a touch of pure maple syrup if that's what you have on hand.
