17 - 1/2 cup shredded cheddar cheese
18 - 1/4 cup sour cream or Greek yogurt
19 - 1/4 cup salsa
20 - 1 lime, cut into wedges

# How-To:

01 - Prepare rice according to package instructions, or use precooked rice to save time.
02 - Heat a large skillet over medium heat. Add ground turkey and cook, breaking it up with a spatula, until browned and nearly cooked through, approximately 5 to 6 minutes.
03 - Add diced onion and red bell pepper to the skillet. Sauté for 3 to 4 minutes until softened. Stir in garlic and cook for 1 minute more.
04 - Sprinkle taco seasoning over the turkey and vegetables. Mix well and cook for 2 minutes. Add 2 to 3 tablespoons water to help the seasoning coat the meat evenly.
05 - Divide cooked rice among four bowls. Top each with the turkey mixture.
06 - Arrange lettuce, cherry tomatoes, avocado, shredded cheese, sour cream, salsa, and cilantro over each bowl as desired.
07 - Serve immediately with lime wedges on the side.

# Expert Hacks:

01 -
  • It comes together faster than takeout, and tastes infinitely fresher without any weird aftertaste.
  • Everyone at the table builds their own, so there's zero complaining about proportions or what got left off.
  • Ground turkey stays lean and tender when you don't overcook it, which means you feel good eating it without any of that heavy, guilty feeling.
02 -
  • Don't skip the water when adding seasoning, because spices need moisture to bloom and distribute evenly, otherwise they sit in little pockets tasting aggressive and separated.
  • Dicing your avocado last-minute isn't laziness, it's the only way to keep it from oxidizing into something gray and unappetizing before anyone takes a bite.
03 -
  • Cook the turkey on medium heat, not high, because rushing it means you end up with gray, dense meat instead of tender and lightly browned.
  • Prep all your vegetables before you touch the stove, because the second that turkey hits the pan, everything moves fast and you won't have time to stand there dicing peppers.
