Sweet Guava Paste for Cheese (Printable)

01 - 2.2 lbs ripe guavas

→ Sweetener

02 - 2 1/4 cups granulated sugar

03 - 2 tbsp fresh lemon juice

# How-To:

01 - Wash the guavas thoroughly, trim both ends, and cut into quarters. Remove seeds if you prefer an extra smooth texture.
02 - Place guava quarters and water in a large saucepan. Bring to a boil over medium heat, cover, and simmer for 15-20 minutes until guavas are completely soft.
03 - Remove from heat. Pass the cooked guavas through a food mill or fine mesh strainer to obtain smooth pulp, discarding all seeds and skins.
04 - Measure the resulting guava puree. Use approximately 1 cup of sugar for every cup of puree, adjusting based on your actual yield.
05 - Return the guava puree to the pot. Add the measured sugar and fresh lemon juice, stirring until the sugar dissolves completely.
06 - Cook over low heat, stirring constantly to prevent sticking, for 40-50 minutes. The mixture is ready when it thickens considerably, becomes glossy, and pulls away from the sides of the pan.
07 - Pour the thickened paste into a parchment-lined loaf pan or baking dish. Smooth the top evenly with a spatula.
08 - Allow to cool completely at room temperature until firm, about 2-3 hours. Unmold from the pan and slice into portions as desired.
